This Cretan delight is handmade in the village of Askifou in the Sfakia region. This is a smoked semi hard cheese with exquisite flavours -nutty, smoky & herbal. It is smoked over 3 days using thyme, sage, oak & cypress being made to an age old family recipe from pasturised Sheep & Goat's milk.
